Celebrated chef and Top Chef season 7 winner Kevin Sbraga’s new Jacksonville restaurant Sbraga and Company will be opening this fall at 220 Riverside in the Brooklyn neighborhood of Jacksonville. Expect housemade bread, small plates and entrees, a raw bar and a whole lot more. The restaurant will focus on Southern crops and grains and utilize modern American culinary techniques. “The harvest of the South offers a bounty of delicious fruits, grains, and vegetables, but they’re often overlooked for expected dishes like barbecue and fried chicken in Southern cooking,” said Sbraga. “While you might see some Southern classics on my menu, I want to put the focus back on the crops.”
Expect Sbraga’s bar program to include your favorite classic cocktails along with plenty of original creations utilizing fresh, seasonal fruits and herbs. Expect housemade breads to include southern favorites like beer bread, cornbread and angel biscuits. On the raw bar you’ll find the staples like oysters, shrimp, clams but to us the really interesting additions will be modern interpretations of steak and vegetable tartare, crudos, and ceviche.
“We want a meal at Sbraga & Company to be an experience that goes beyond sitting down and eating dinner,” said Sbraga. “When you visit my restaurant, you’re in my home and I want you to feel welcomed as my company. I want you to sit back and have a great time.”
