This Week’s Worst Health Inspection Offenders

Each week, we intend to bring you a list of 5 restaurants with the largest number of health inspection violations.  Here is this week’s lineup of top offenders, whose violations included food stored above or below a safe temperature and live insects in the kitchen.

High Priority – Shell eggs held in a unit maintaining an ambient air temperature greater than 45 degrees Fahrenheit. Whole shell eggs 63° in walk in cooler with live crabs. Operator stated he brought them with him to the restaurant at 11:00 today **Repeat Violation** **Warning**

High Priority – Cooked poultry not reaching a minimum internal temperature of 165 degrees Fahrenheit for 15 seconds. Fried chicken wings cooked to 145°. Employee discarded chicken wings. **Corrected On-Site** **Warning**

High Priority – Food with mold-like growth. Black mold like substance (from soda gun hose) on ice in ice bin located in bar area. Manager removed ice. **Corrected On-Site** **Warning**

High Priority – Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Missing vacuum breakers outside on two different hose bibbs. **Warning**

 

Shrimp Shack Seafood Kitchen Iii (14440 Beach Blvd)

Inspection date: 4/27/2016

Total: 20 (High: 4, Intermediate: 6, Basic: 10)

High Priority – Employee failed to wash hands beforechanging gloves and/or putting on gloves to work with food. **Warning**

High Priority – Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Multiple containers of rice 46-47° manager stated he would move items to walk in cooler. Cheese 46° on reach in cooler across from oven end of cook line. Large container of batter 65° sitting out on cook line, recommended time control and provided forms. **Warning**

High Priority – Raw animal food stored over ready-to-eat food. Container of raw hamburger over container of pickles, moved by manager during inspection **Corrected On-Site** **Warning**

High Priority – Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. tomatoes 48°, lettuce 47°, chicken 48°, shrimp 46°, krab meat 47°, all on reach in cooler on cooks line. Manager had pans missing in top of unit. Manager stated items were placed in unit just after opening at 12:00 Manager replaced pans. High Priority – Potentially hazardous (time/temperature control for safety) hot held at less than 135 degrees Fahrenheit or above. Hard boiled eggs 128°, cooked sausage 131°, cooked corn 131° all in steam table in kitchen. Manager stated items have been in unit sone 12:00. Manager turned unit hotter. High Priority – Raw animal food stored over or with ready-to-eat food in reach-in freezer – not all products commercially packaged. Raw shrimp, fish over cooked crawfish, crab legs and onion rings in reach in freezers **Warning**

High Priority – Raw animal food stored over ready-to-eat food in walk-in cooler. Whole shell eggs stored over sauce in walk in cooler. Manager moved eggs **Corrected On-Site** **Repeat Violation** **Warning**

High Priority – Shell eggs held in a unit maintaining an ambient air temperature greater than 45 degrees Fahrenheit. Whole shell eggs 50° in pan in top of make table on cooks line. Manager replaced missing pans that allowed the cold to escapes unit. Manager stated eggs were placed in unit just after they opened at 12:00. Rechecked temperature-whole shell eggs at 46° **Corrective Action Taken** **Warning**

High Priority – Shell eggs in use or stored with cracks or broken shells. See stop sale. Two broken shell eggs stored in same container with whole shell eggs. Manager discarded cracked eggs **Corrective Action Taken** **Warning**

Inspection date: 4/28/2016

Total: 22 (High: 4, Intermediate: 8, Basic: 10)

High Priority – Live, small flying insects in kitchen, food preparation area, or food storage area. Approximately 20 small flies observed in drain in three compartment sink in kitchen and 2 large flies observed in kitchen and front counter area **Warning**

High Priority – No sanitizer of any kind available for warewashing. Only use single-service items to serve food to customers until sanitizer is available for warewashing. No sanitizer available in establishment at time of inspection **Warning**

High Priority – Raw animal food stored over ready-to-eat food in reach-in cooler. Whole shell eggs stored over cooks crabs in glass font cooler in kitchen. Manager moved eggs to different cooler **Corrected On-Site** **Warning**
